If you know you want to stay on the beach in a tropical location, for example, look for a vacation destination on the coast of Mexico or South America. If you don't mind traveling further, you might look somewhere off the coast of Europe or Australia. 

When you know the dates you want to travel, it will be easier to book your lodging if you do so plenty early. However, if you are looking to score a good deal on booking something last-minute, you take the chance of it not being available specifically where you want to stay. After you have arranged for your accommodations for your vacation stay, you can plan for the smaller details that will help make your vacation extra comfortable.
